Convento San Francisco, in Peñafiel, was the first Franciscan monastery in Spain, which Javier and his brother Oscar are meticulously restoring. At the same timeas the restoration project of the monastery; has been to produce a top quality wine with the restoration of the cultural heritage. The 14th Century building contains a super-modern winery, completely gravity fed, perfectly adapted to the architectural conjunct. Before starting on this project with his brother, Javier apprenticed at the famous property Hacienda Monasterio in Ribera del Duero working with the award winning Peter Sisseck as his cellar master. The buildings of the new construction are designed using style and materials such: stone, mudéjar brick and wood, in agreement with the environment and with the old Monastery.
The Monastery of San Francisco, has a new produced building designed to the technical group of the winery and also to achieve the high expression of the grape with 100.000 kg of capacity. The warehouse, also new, is located inside to avoid unnecessary movements of the wine that change its natural characteristics.
